PECTINASE ENZYMES

BioPro – APEC (Pectinase Enzyme for Fruit Processing)

DESCRIPTION:

BioPro - APEC is a Pectinse Enzyme derived from a selected strain of Aspergillus spp. It has been specifically developed for extraction and clarification of juices such as Apple, Pear, Plum, Mango, Pomegranate etc. It increases juice yield in mash treatment of Apple, Pear, Mango, Pineapple, Grape & Citrus fruit processing while facilitating clarification and viscosity reduction.

APPLICATION:

BioPro - APECis a whole Pectinase Enzyme with various activities such as Poly Galacturonase, Pectin Methyl Esterase and Pectin Lyase. It breaks down the cell wall of fruits thus providing excellent yields in fruit processing. It is also used for Fruit and Vegetable Juice clarification (de-pectinization).

Application of BioPro - APEC in mash treatment and juice clarification gives the following benefits:
Rapid extraction of juice with decreased pressure build up.
Increase in free run juice and total yield.
Increase in extraction capacity due to faster filtration rate.
Fast viscosity reduction.
