BACTERIAL AMYLASE ENZYMES
BioPro – ALKA (Bacterial Alpha Amylase Enzyme for Food Industry)
DESCRIPTION:
BioPro – ALKA is an Alpha Amylase preparation derived from a selected strain of Bacillus spp. It has been designed especially for Starch modification. It is a food grade product with broad substrate specificity and is able to efficiently hydrolyze most soluble Starch matter. It finds use in various Food Processing and Baking applications.
APPLICATION:
BioPro – ALKA is a Bacterial Alpha Amylase Enzyme in Liquid form. It catalyzes the hydrolysis of alpha – 1, 4 – glycosidic linkages of starch polysaccharides to yield dextrins, oligosaccharides, maltose and D – glucose thus providing excellent yields in Food processing. It is especially used for manufacture of French bread in Baking Industries.
Application of BioPro – ALKA in Baking Industries gives the following benefits:
Enhances loaf volume.
Improves texture and crumb structure.
Ideal for production of french type bread and buns.
Improves crumb softness.
